Paloma is Spanish for dove and this cocktail was allegedly created in Mexico by Don Javier Delgado Corona in Tequila. A Classic Paloma has 60 ml of silver tequila, 30mls of freshly squeezed pink grapefruit juice, 15 ml of freshly squeezed lime juice and 8 ml of Agave syrup all stirred up in a highball glass over ice. You can top it up with a bit of soda if you like fizz.
If you like to keep your summer cocktail making in Chigwell, Loughton and Woodford really simple you could just make a Simple Paloma. For this, you use 60 ml of silver tequila, 8 MLS of freshly squeezed lime juice over crushed ice and top it all up with 120 mils of a quality Grapefruit soda.
To spice things up, what about The Paloma Picante? This takes 60 ml of silver tequila, 8 ml of habanero nectar, 60 ml of grapefruit soda and 4 cubes of ruby red grapefruit. Muddle the grapefruit cubes in a highball glass. Add the rest of the ingredients and crushed ice, and then top with the quality grapefruit soda.
